Cleaning Cold Storage Rooms and Central Kitchens

A Central Kitchen handles large volumes of raw materials every day, making cold rooms and storage areas critical to food safety. Inadequate cleaning can lead to cross-contamination, odors, mold growth, food residue buildup, and microbial risks.

Why Do Cold Rooms Require Systematic Cleaning?

Cold rooms present specific hygiene challenges:

Low temperature & high humidity — Refrigeration slows microbial growth but does not eliminate microorganisms. Moisture and condensation can also support microbial persistence.

Food and grease residues — Meat, seafood, vegetables, and other raw materials can leave fats, proteins, blood residues, and organic matter on floors, walls, shelving, and equipment.

Multiple surface types — Stainless steel, tiles, aluminum shelving, plastic containers, and cutting boards require appropriate cleaning methods.

Food safety requirements — Cleaning and sanitizing products must be correctly selected and used according to their intended application, dilution, and contact time.

KEEEN Cleaning Program

Step 1 — Pre-Soaking

K105 Pre-Soak & Stain Remover

Helps loosen food residues, grease, and stubborn stains on trays, containers, and kitchen utensils before washing, reducing scrubbing effort and improving cleaning efficiency.

Application: Dilute as recommended, soak for approximately 10–20 minutes, scrub, and rinse thoroughly.

Step 2 — Utensil Cleaning

K103 Dish, Pot & Pan Cleaner

Designed for professional washing of pots, pans, trays, containers, and kitchen utensils, with effective grease and soil removal.

Application: Dilute as recommended, wash thoroughly, and rinse with clean water.

Step 3 — Cutting Board Cleaning

K107 Cutting Board & Heavy Stain Remover

Helps remove stubborn food stains, grease, and residues from cutting boards and suitable food preparation surfaces.

Application: Remove food debris, apply K107, spread with a nylon brush, leave for approximately 15–30 minutes, scrub thoroughly, and rinse.

Step 4 — Food-Contact Surface Sanitizing

K307 Quat Plus Sanitizer

After cleaning, K307 can be used to sanitize applicable food-contact utensils and surfaces, helping reduce microorganisms as part of a professional food hygiene program.

Application: Dilute and apply according to the specified concentration, contact time, and product label instructions.

Step 5 — Floor & Hard Surface Hygiene

K308 Floor & Hard Surface Cleaner with Sanitizer

Supports cleaning and sanitizing of floors, walls, and other suitable hard surfaces within central kitchens and cold storage areas.

Application: Dilute as recommended, apply using appropriate cleaning equipment, and follow the specified contact time.

Recommended Frequency

Daily: K103, K105 where required, K107, and K308
After use: K307 for applicable food-contact surfaces
Weekly / as required: K104 for heavy grease and stubborn soils
Periodic: Deep cleaning based on hygiene risk and operating conditions

Actual frequency should be determined by risk assessment, production volume, raw material type, soil load, and the facility’s GHP/HACCP sanitation procedures.

Why KEEEN?

KEEEN combines Bio-Organic innovation with professional hygiene solutions, focusing not only on individual products but on the entire cleaning process—from soil removal and sanitizing to operational efficiency and downstream wastewater considerations.

This approach supports three key objectives:

Food Safety — Helps control contamination risks across utensils, equipment, food-contact surfaces, and production environments.

Operational Efficiency — Appropriate chemistry and procedures can reduce unnecessary cleaning steps, chemical consumption, labor, and rework.

Environmental Responsibility — Bio-Organic solutions are developed with consideration for biodegradability and compatibility with biological wastewater treatment processes.

Cleanliness Is Part of Food Safety

Effective cold-room hygiene requires more than visible cleanliness. It requires a controlled process of soil removal → cleaning → rinsing → sanitizing, where applicable.

KEEEN provides a systematic hygiene solution for Central Kitchens—from pre-soaking and utensil cleaning to sanitizing and environmental surface care—helping operations maintain Food Safety, efficiency, and responsible environmental management.
